Easy Chicken Roast

Chicken : 1 kg
Onion: 3
Ginger paste: 1 teaspoon
Garlic paste: 1 teaspoon
Green chillies: 8
Tomato : 2
Turmeric powder: 1/2 teaspoon
Chilli powder: 2 teaspoon
Pepper powder: 1 teaspoon
Fennel seed powder: 1/2 teaspoon
Cumin seed powder: 1 pinch
Garam masala powder: 1 teaspoon
Thick coconut milk: 1/4 cup
Cashews(soaked): 10
Salt: to taste
Coriander leaves: few
Curry leaves : few
Lemon juice: 1/2 teaspoon
Coconut oil: 2 table spoon


Wash and clean the chicken pieces.Into a bowl,add turmeric powder,chilli powder,ginger garlic paste,crushed 4 green chillies salt and lime juice.Mix well and marinate the chicken pieces.keep aside for 2 hours.Take a clay pot and add coconut oil.Add curry leaves and sliced onions.sort well by adding salt. Sort well until light brown.Add all the remaining powders.sort well until the raw smell goes.Add chopped tomatoes and mix well.close the pan.when the tomatoes gets mashed up,add the chicken and cook well.grind the cashews with thick coconut milk.when all the water gets evaporated,add the coconut milk mix.when the gravy thickens add coriander leaves and switch off the flame.It is a tasty chicken Roast and rich too.It is well going with ghee rice,porotta,chapathies,pathiri and even appam.Try this and leave your comments.
