Carrot_Beetroot_Dates Pickle

Carrot: 2
Beetroot: 2
Dates: 1 cup
Ginger paste: 2 teaspoon
Garlic paste: 2 teaspoon
Green chilli: 3
Red chilli powder: 2 tablespoon
Curry leaves: few
Vinegar: 1/2 cup
Gingelly oil: 3 table spoon
Mustard seeds: 1/2 teaspoon
Fenugreek seeds: 1 teaspoon
Cumin seeds: half teaspoon
Asafoetida/hing powder: 1/2 teaspoon
Salt: as required
Sugar: 1 teaspoon
Chop the carrot and beetroot into small pieces.Deseed the dates and cut each into two pieces.lnto a bowl, add the chopped pieces and mix with chilli powder,salt and vinegar.keep it 2 hours or overnight.Heat a kadai and pour gingelly oil.splutter mustard and 1/2 teaspoon fenugreek seeds.Add ginger garlic paste and sort well.Add crushed chillies and sort well until raw smell goes.Add curry leaves and the carrot _beetroot mix .sort well and close for 5 minutes.Now sort again and add 1 teaspoon sugar.adjust the salt and spices level.Now roast the remaining fenugreek seeds,cumin seeds and hing powder in another pan.Grind it nicely.Now add it to the pickle and mix well.Now the tasty Carrot-Beetroot-Dates pickle is ready.when it cools down,store it in a clean,air tight glass bottles. It will be ready for use after two weeks.This is good for children as it contains the vegetables and fruit having high nutrients for the child health.These three contains higher level of anti-oxidants,iron,vitamins and minerals for the growth of children.It can be used as a side dish for your kids lunch box.Hope you liked and try this.
