CASHEW RICE LADDOO

Rice(parboiled): 1 cup
Jaggery: 1/2 cup
Coconut grated: 1/2 cup
Cashews: 1/2 cup
Cardamom: 3
Roast the rice until crispy.grind it on a mixi.It shouldn't be too fine.Roast the cashews and grind along with the rice powder.Melt the jaggery and strain it.Add it to the rice cashew mix.crush the cardamom and add it to the mix.Add the grated coconut.Mix well very nicely.Make lemon sized balls out of it.The tasty cashew rice ladoos are ready now.you can add dessicated coconut and 1 teaspoon ghee to make it more tastier.It is a traditional Malabar snack and very tasty too.Try this and enjoy.
