Brinjal steam fried in banana leaf

Brinjal                           : 1 big
Shallots(chopped)       : 4 table spoon
Onion                             : 2
Tomato                           : 1
Green chilly                   : 1
Ginger paste                  : 1/2 teaspoon
Garlic paste                    : 1/2 teaspoon
Kashmiri chilli powder: 3 teaspoon
Red chilli powder           : 1/2 teaspoon
Turmeric powder           : 1/2 teaspoon
Pepper powder                : 1/2 teaspoon
Fennel seed powder        : 1 pinch
Salt                                      : to taste
Thick coconut milk          : 3 teaspoon
Curry leaves                     : 2 table spoon
Coconut oil                        : for frying




Cut Brinjal into thick pieces.grind 1/2 teaspoon shallots , 1/4 teaspoon turmeric powder,1/2 teaspoon ginger garlic paste,11/2 teaspoon Kashmiri chilli powder,salt,1/4 teaspoon red chilli powder,some curry leaves,1/2 teaspoon coconut oil with some water and marinate the Brinjal pieces.keep it aside for half an hour.Now heat 3 teaspoon coconut oil in a pan and add sliced onions and shallots with some salt to become light brown colour.then add all the remaining masalas and saute well until the raw smell goes.now add tomato and saute well till it is well cooked.then add thick coconut milk and mix well.now the masala to wrap the Brinjal pieces is ready.now fry the Brinjal pieces .take a banana leaf and spread some masala in one layer and place the Brinjal piece over it.Again spread the masala.add 2 sliced green chilly pieces and some curry leaves over it that will enhance the taste.then wrap the banana leaf and fry both sides in medium flame until slightly burn the leaf. repeat the process with all Brinjal pieces. Now the yummy Brinjal masala is ready.serve and enjoy😍
