Soft spongy idly

Idly rice/white rice: 2 cups
Urad dal: 1 cup
Cooked rice/Poha:1/4 cup
Fenugreek seeds:1/2 teaspoon
Salt: to taste
Ice water: as required

Wash and Soak rice,urad dal and fenugreek seeds separately for about 4 hours.after that
Grind urad dal and fenugreek with some cold water to get a fine paste.add rice frequently and grind it.it shouldnot be ground finely.now add cooked rice or Poha.if you use Poha soak it for 10 minutes just before grinding.the batter should be very thick like the cake batter.pour the batter into a large container.mix with your hands very nicely.hand mixing is preferred that makes the batter become more soft and fermented after 6 hours.close the container tightly.keep this batter in a warm area or inside your oven for 6 to 8 hours or overnight.after that mix the batter and add salt to taste. Then boil water in a steamer and pour batter in idly mould after sprinkling some oil.cook it for 7 to 10 minutes.after that take out from the steamer and leave it for 10 minutes to become cool.that makes the demoulding easy.now demoulding the idlies.soft spongy idly is ready now.it can be serve with coconut chutney,sambar and onion chammanthi.this breakfast will defenitely love your kids .try this and enjoy😍
