Mutton kabsa:

Mutton: 1 kg
Onion:3_4
Garlic chopped: 4 table spoon
Ginger chopped : 2 table spoon
Tomato puree: 2 table spoon
Thick tomato paste: 2 table spoon
Ghee: 5 table spoon
Oil: 1/4 cup
basmati rice: 4 cup
Water: 6+1/4 cup
Mint leaves: few
Salt: as required
Lime juice: 2 teaspoon
For Arabic masala:
Raw coriander seeds: 2 teaspoon
Cumin seeds: 1/2 teaspoon
Fennel seeds:1/2 teaspoon
Cardamom powder: 1/4 teaspoon
Cinnamon powder: 1/4 teaspoon
Cloves powder: 1/4 teaspoon
Red chilli powder: 11/2 teaspoon
Pepper powder: 1/2 teaspoon(grind all together)
Cashews: 1 table spoon
Raisins: 1 table spoon
Turmeric powder: 1 teaspoon
Dried lemon: 2
Cardamom pods: 4
Cinnamon stick: 2
Cloves: 4

Wash and clean the mutton.cut it into medium pieces.Now marinate it with turmeric powder,some salt and 1/2 teaspoon lime juice.keep it aside for half an hour.Now cook it in a pressure cooker for about 3/4 th of it is cooked.Now heat a pressure cooker and add oil with 1 teaspoon ghee.fry the chopped garlic in it and keep aside.Now add the chopped onion.sort well with some salt.then add  the tomato puree and tomato paste.sort well until it is well cooked and all the water content evaporates.Then add the Arabic masala powder and sort well until the raw smell goes.Then add mint leaves and dried lemon.you can made small cuts on the lemon to get its flavor.now add the fried garlic and cooked mutton pieces.mean while wash and Soak the rice for 10 minutes.Then drain it .In another pan,heat the remaining ghee.fry cashews and raisins.keep it aside.add the whole spices.roast well.Add the rice and sort gently for 5 minutes.add it to the pressure cooker.Add the measured water.If there is water in the cooked mutton,you can subtract that amount from the measured water.Add lemon juice and required salt.close the cooker and cook in medium flame for 10 minutes.Now wait for the pressure to settle down automatically.Then close the cooker and mix gently with a fork.serve it in a wide plate.Garnish it with fried cashews and raisins.when it cools down partially it will be perfectly done to serve.It is one of the Arabic food that is now trending in Malabar side also.Try this and enjoy😍
