Avil Prathaman

Avil/Poha :1 packet
Jaggery: 500 g
Ghee: 4 tablespoon
Coconut milk(thin): 2 cups
Coconut milk( thick): 1 cup
Cashews: few
Raisins: few
Coconut pieces: few
Cardamom powder: 1/2 teaspoon
Heat a thick bottomed pan or uruli.Add ghee and roast the cashews,coconut pieces and raisins.keep it aside.Add avil into the same ghee and roast well.Melt the Jaggery and strain it.Add it to the roasted avil.mix well .when the water content evaporates add the thin coconut milk.mix well and allow to cook until 3/4 th of the water content evapourates.add a pinch of salt to balance the sweetness.Now add the thick coconut milk and mix well.Dont allow it to boil.Now sprinkle the cardamom powder and the roasted cashews and raisins.close for few minutes.Now the tasty Avil Prathaman is ready now.You can serve after cooling it.Try this and enjoy😍
