Beef Biriyani

Beef:1 kg
Biriyani rice(Basmati or kaima rice): 11/2 kg
Onion: 5 (medium)
Shallots:1/4 cup
Ginger: 2 table spoon
Garlic: 1 1/2 table spoon
Green chillies: 8
Tomatoes: 4
Turmeric powder: 3/4 teaspoon
Pepper powder: 3 teaspoon
Garam masala powder: 11/2 teaspoon
Salt: as required
Ghee: 4 table spoon
Oil: 2 table spoon
Mint and coriander leaves: a handful
Curd: 2 table spoon
Carrot: 1
Lemon juice: 2 table spoon
Spices(cardamom,cloves,fennel seeds,cinnamon stick): all together 1 table spoon
Cashews: 10
Raisins: 10

Cut the beef into medium pieces.wash and clean.Cook the beef with salt and 1 teaspoon pepper powder for about 8 to 10 whistles or cook until it is 95 percentage done.A dding water is not required as beef have water content. Now prepare the masala.slice the onions as thin pieces.Into a pan,add 2 table spoon ghee and 2 table spoon oil . fry 2 table spoon Onion until golden brown.the bista is ready now.In the same oil fry the cashews and raisins.Take out and keep aside.Now add the remaining onion by adding salt  and sort well until light brown.crush the chillies,garlic,shallots and ginger,Add into the pan and sort well until the raw smell goes.now add turmeric powder ,2 teaspoon pepper powder,garam masala powder and sort well.add tomato pieces and sort well.add curd and 1 teaspoon lemon juice .mix well.add the cooked beef into it and mix well.add chopped coriander and mint leaves.mix well.adjust the spice level according to your preference.now the masala is ready.In the mean time,wash and Soak the rice for 10 minutes.Into a large vessel,add enough water.add the cardamom and other spices with the required salt.the salt level must be slightly higher than the normal taste level.add 1/2 teaspoon ghee and 1/2 teaspoon lemon juice.add carrot and allow it to boil.when it starts boiling,add the soaked and drained rice.allow it to cook until 90 percent done.strain the rice using a strainer.keep it aside.Take another big vessel to make dum.Heat the pan to become dry.pour 1/2 teaspoon ghee.add 1/4 portion of the rice and spread.add 1/2 portion of masala over that.again add half of the remaining rice and spread.sprinkle some garam masala powder,1/2 teaspoon lemon juice,1/2 teaspoon ghee,half of the bista,coriander leaves,mint leaves cashews and raisins.simililarly,add onee more  layer . add the remaining beef masala and over that the remaining rice and spread well. sprinkle  the items as the first layer.If you want to get a nice yellowish colour to the biriyani , mix  2 table spoon milk and  1/4 teaspoon turmeric powder.sprinkle over the top.Then close the vessel tightly.switch off the flame and  place a dosa pan.place the biriyani vessel over it.cook for 30 minutes in very low flame.After that,our biriyani will be nicely dummed.Try this and enjoy😍
