Sadya Pink Palada

Rice ada: 1 packet
Milk: 2 ltr
Sugar: 6 table spoon
Salt: 1 pinch
Ghee: 3 table spoon
Cardamom powder: 1 teaspoon

Boil enough water in a pan and Soak the cleaned rice Ada for half an hour ( or cook well as per the instructions on the Ada packet).ln a pressure cooker,pour the milk with 1 glass water and 4 table spoon sugar.Allow it to boil.when it starts boil close the pressure cooker and reduce the flame to very low.Now cook for about 1 hour.Make sure that the cooker shouldn't release the whistle.This method is followed to get a nice pink colour for the payasam.Then switch off and wait for the pressure settle down.After the Ada becomes very soft ,drain it and pour enough water over it to remove the starch.Now heat a pan and add ghee.pour the drained Ada into it and sort well.Add the salt and remaining sugar.sort well until the raw smell goes.A free the pressure releases ,open the cooker.you can see a nice pink shade on the milk.strain the milk using a strainer if there is layering of milk.Now slowly add this milk to the Ada and stir well.stir well occasionally until the payasam become semi thick consistency.Add the cardamom powder and mix well.Adjust the sweet and salt level.Now the easy and tasty pink palada is ready to serve.It is very easiest method and not at all time consuming.Normally we have to take 5_6 hours to make authentic palada.That we were making in big urulis and need to stir well a long time to get the nice consistency.
