MYSORE MASALA DOSA

white rice:2 cup
Urad dal: 1/2 cup
Fenugreek seeds: 1 teaspoon
Poha: 3/4 cup
Cooked rice: 2 tablespoon
Salt: as required
Wash and Soak the rice,urad dal and fenugreek separately for 4 hours.Then drain it.first grind the urad dal and fenugreek with small amount of water to a fine paste .pour it to a vessel.soak Poha in water just before grinding.then grind white rice,poha and cooked rice by adding required water to a coarse paste.pour it to the vessel.add salt and mix with your hands so that it ferment well.keep it for 10 _14 hours to ferment.After that ,mix well .If you want crispy dosa add 1/2 teaspoon sugar before making dosas.Heat a pan and pour a scoop of batter and make thin dosas.sprinkle oil and close for few minutes until crispy
For masala:
Potato: 3
Carrot: 1
Garlic: 4 cloves
Green chilli: 3
Ginger: 1 piece
Curry leaves: few
Coconut oil: 2 tablespoon
Mustard seeds: 1/2 teaspoon
Chana dal: 1/2 teaspoon
Urad dal: 1/2 teaspoon
Onion: 1
Tumeric powder: 1/2 teaspoon
Chilli powder : 1/2 teaspoon.
lemon juice: 1/2 teaspoon
Coriander leaves: few
Salt: as required
Cook and mash the potatoes.lnto a heated pan,add oil and splutter mustard,chana dal and urad dal.add curry leaves and sliced onion.sort well by adding salt until light brown.add chopped garlic,chillies and ginger.sort well until raw smell goes.add turmeric and chilli powders.sort well.Then add mashed potatoes and mix well.add boiling water and allow to cook for 5 minutes.Then add lemon juice and mix well.sprinkle some coriander leaves.the masala is ready.
For coconut chutney:
Grated coconut: 1/2 cup
Shallots: 3
Green chillies: 4
Coconut oil:2 tablespoon
Mustard seeds:1/2 teaspoon
Curry leaves: few
Into a heated pan ,add coconut oil and splutter mustard seeds.grind coconut,s shallots and green chillies with required water.pour this into the pan by adding salt.mix well allow it to boil a little.Now it's ready.
Place the masala at the center of each dosas and fold 3 sides.serve as hot and enjoy😍
